Nutritional Pathophysiology
Taught by Kirstin Vollrath MS, RD, LD. In this course, I was taught the principles of Medical Nutrition Therapy and the practice of the nutrition care process, including principles and methods of assessment, diagnosis, identification and implementation of interventions and strategies for monitoring and evaluation. I also completed two Informational Handouts that are linked below.
Commercial Food Production
NUTR 2333 & NUTR 2133
This course was led by Ann Svendsen-Sanchez MS. It had both a lecture and a lab that taught me the general principles of food preparation, food service systems, quality control, menu planning, flow of foods and food production, procurement, profit and loss, distribution and service, safety, recipe modification, sanitation, and maintenance. I got to complete a number of projects and videos that are shown below.


Introduction to Nutritional Counseling
NUTR 4348
This course was led by Dr. Caryn Honig MEd RD LD and was honestly my favorite course that I have taken so far. I was taught interpersonal communication skills; counseling theory and methods; interviewing techniques; role of food in promotion of a healthy lifestyle; influence of socioeconomic, cultural, and psychological factors on food and nutrition behavior; promotion of pleasure eating; concepts of human and group dynamics. I was also used as an example and was counseled by the professor herself. I completed both a group project and a Nutritional Counseling Session which are both linked below.
Advanced Nutrition
NUTR 3334
Directed by Ann Svendsen-Sanchez, MS. I was educated about the chemistry of nutrition in our body and in the foods we prepare or purchase. Also, the metabolic pathways of macronutrients and the role of micronutrients in the human body. I was also taught how distinguish “garbage” nutrition information from real information. In this course, I wrote a research paper on the micronutrient disease Maple Syrup Urine Disease (MSUD) linked below.
